Slow cooker recipes

Quantities are flexible. Check towards end of cooking time in case liquid is getting too low.

Porc Normande:

Diced pork
Sliced onion
Sliced cooking apples
Apple juice/cider/calvados plus water if needed to give sufficient liquid

The quantities of everything are up to you provided you make sure you have enough liquid – the usual rule of thumb is a third of the bowl or to just cover the ingredients – don’t forget they’ll add to the liquid as they break down.

Cook on high for about 7 hours then switch off and add
yoghurt/creme fraiche/cream depending on what you’ve got, and add seasoning to taste – I add salt and garlic. Don’t add those at the start of cooking because it would be too strong.

Serve with anything, really, but I prefer jacket potatoes (10 minutes in the microwave) or rice (those 2 minute ones, also in the microwave)

Chicken broth

Chicken carcase
chopped onion
water/water and chicken stock cube – to cover carcase

Cook on high for eight hours
Get as much meat as possible off the carcase (this is the fiddly bit) and return it to the dish. Discard the bones.
Add veg (finely chopped) to taste - celery and carrot are standard, and good.
Cook till veg are soft – the liquid is already hot so maybe about an hour
Add some of those tiny thin soup noodles (which should soften in about a minute or you can transfer the broth to a pan)and season to taste – at least salt and pepper but you might like to sprinkle some herbs in too.

Serve with crusty rolls or any favourite bread.

Beef stew with dumplings

Diced beef
Onion/carrot/celery/potatoes
Other veg you happen to have lying around
Water and/or wine or beer (but not both) seasoned with a very small amount of bovril or marmite
You can add a can of chopped tomatoes for a change
Cook on high for seven hours plus, then add dumplings (use Atora suet, standard or veggie, and follow the instructions on the packet)
Put the lid back on and carry on cooking for at least half an hour. This cooks the dumplings but we prefer to then put the dish in the oven till the dumplings are brown and crusty. You can do the transfer-to-oven bit when you add the raw dumplings.

Serve on its own. There are already potatoes in there.

Omm nom. These sound delicious especially the Porc Normande. I have the remains of a gammon joint so may try it with that.

Enjoy! Chop the remains of the joint fairly small and if it's already cooked reduce the cooking time a bit.

The porc normande is one of our favourites. And I wold never make chicken stock any other way now. Enjoy!
